The Willow Creek Coffee Bean Guide: Arabica vs. Robusta, Roast Levels & Grind Sizes

Coffee starts long before the brew. It begins with the bean — where it grows, how it's processed, and how it's roasted. This guide breaks down everything you need to know to choose the right coffee for your cup.
Bean Varieties
Arabica vs. Robusta: What's the Difference?
The two most widely grown coffee species couldn't be more different in character. Arabica is the specialty coffee standard — smooth, complex, and nuanced with bright acidity. It thrives at high altitudes (600–2,200m) and is the foundation of pour overs, filter coffees, and single-origin espressos. Robusta, grown at lower altitudes (0–800m), delivers a bold, earthy cup with higher caffeine content (1.7–3.5% vs. Arabica's 0.8–1.4%). It's the backbone of espresso blends, instant coffee, and strong brews.
At Willow Creek, our focus is on traceable Arabica beans sourced from origin partners in Guatemala, Ethiopia, Peru, and beyond. Explore our Single Origins collection →
Roast Levels
Coffee Roast Levels Explained
Roast level dramatically shapes flavor, body, and acidity. Here's a quick breakdown:
- Light Roast — Light brown, no oil on surface. Bright acidity, floral and fruity notes. Best for pour over and filter methods.
- Medium Roast — Medium brown, slight oil. Balanced flavor, sweet and smooth. The everyday crowd-pleaser.
- Med-Dark Roast — Rich brown, some oil. Full body, caramel and nutty notes. Great for drip and espresso.
- Dark Roast — Dark brown, oily surface. Bold, rich flavor, lower acidity. Classic espresso territory.
- Extra Dark Roast — Very dark and shiny. Smoky, intense, bittersweet. For those who want maximum roast character.
