The Origin Story
The Birthplace of Coffee
Unlike every other coffee-producing country in the world, where coffee trees were introduced through colonialism and trade, Ethiopia is where Arabica coffee was born. It grows wild here. It always has.
Around 850 AD, a young Oromo goat herder named Kaldi noticed his flock acting unusually energetic after eating bright red berries from a wild shrub in the highland forests. Kaldi tried the berries himself, experienced a rush of alertness, and brought them to a local monastery. The monks initially tossed the berries into a fire, declaring them the devil’s work. But the roasting beans released such an intoxicating, aromatic scent that the monks raked the seeds from the ashes, crushed them, and dissolved them in hot water — creating the world’s very first cup of coffee.

In the sweeping indigenous shade forests of southwestern and southern Ethiopia, coffee does not need to be planted. It grows wild. The trees in the Sidama region are not cultivated varieties bred in a laboratory — they are the original, ancient Arabica trees, carrying thousands of years of genetic diversity that no other origin on earth can replicate.

Sidama — Extreme Altitude, Ancient Soil
At 2,000 to 2,200 meters above sea level, the Sidama region is exceptionally high — even by East African standards.
The thinning air and cold mountain nights at this elevation slow cherry development to a crawl. Where a lower-altitude cherry might mature in weeks, a Sidama cherry at 2,200 meters takes months — building layer upon layer of sugars, organic acids, and aromatic compounds that produce the floral elegance and berry intensity that make this coffee globally famous.
Altitude & Delicate Body
At 2,000–2,200 MASL, the air is thin and the nights are cold. This extreme altitude produces a coffee with a delicate, tea-like body — light and refined rather than heavy and full.
Indigenous Forest Soil
The highland forest soils of Sidama are rich with centuries of decomposed organic matter from the shade canopy above — contributing to the clean, complex flavor profile and the vanilla and caramel sweetness.
The Producers
The Garden Coffee System
In the Sidama region, coffee is rarely grown on large industrialized estates. Instead, it is produced using the “Garden Coffee” system — one of the most intimate and sustainable farming models in the world.
Smallholder families grow coffee trees right in their backyards alongside food crops like Enset (false banana). These are not commercial plantations. They are family gardens where coffee has grown for generations.
Schools Built by Specialty Coffee
When international buyers pay premium specialty prices for high-scoring Sidama lots, a dedicated percentage of those profits is funnelled into a communal cooperative fund used to build primary schools in isolated rural areas and fund agricultural training programs.
Garden Coffee vs. Estate Coffee
Unlike the large estate model found in some origins, Ethiopia’s garden coffee system is uniquely intimate. The farmer is also the harvester, the caretaker, and the steward of trees that may be older than their grandparents.
Enset Intercropping
Enset — the “false banana” — provides natural shade, contributes organic matter to the soil, and serves as a food security crop for the farming family. Coffee and Enset have coexisted in these gardens for centuries.
The Process
Natural and Sun-Dried — The Flavor Amplifier
The natural process leaves the entire fruit intact on the bean during drying — the most demanding and flavor-intensive processing method in specialty coffee.
Whole red cherries are spread in thin layers across elevated mesh drying tables and left to dry in the highland sun for 2 to 3 weeks. Workers turn the cherries by hand every few hours. As the fruit slowly desiccates, the bean inside absorbs all the natural sugars, concentrated organic acids, and intense fruit compounds from the pulp.

Why Natural Processing Tastes Like This
The natural sun-drying process unlocks the explosive berry and deep caramel/vanilla sweetness. The extreme altitude and heirloom genetics drive the elegant, tea-like floral aromas and bright acidity. These two forces combine to produce a cup that is simultaneously bold and refined, sweet and bright, complex and approachable.
Whole Cherry Drying
The entire fruit dries together on raised beds. The bean absorbs sugars and fruit compounds directly through the drying pulp over 2–3 weeks.
Raised African Beds
Elevated wire mesh tables allow airflow above and below the cherries, preventing ground mold. Workers turn cherries by hand every few hours.
Berry & Floral Notes
The berry intensity and floral aromatics are a direct result of the natural process — fruit sugars and aromatic compounds absorbed into the bean during slow sun-drying.
Vanilla & Caramel Sweetness
The deep caramel and vanilla notes emerge as the fruit’s natural sugars concentrate and caramelize during the extended drying period.
The Market
The ECX & The Direct Export Track
For decades, all Ethiopian coffee had to pass through the Ethiopia Commodity Exchange (ECX). But the ECX came with a significant cost: traceability.
The original ECX system blended similar regional coffees together, stripping away the cooperative identity and the specific Sidama origin story that specialty buyers pay a premium for.
The Reform That Changed Everything
Recent legal reforms in Ethiopia now allow cooperatives to bypass the main ECX auction blocks for specialty lots — selling directly to international buyers through a direct export track. This means this specific cooperative can preserve its Sidama identity, maintain full traceability from garden to cup, and secure significantly higher premiums for its members.

The Culture
Buna — The Sacred Coffee Ceremony
In Ethiopia, coffee is known locally as Buna. It is not a quick morning caffeine fix — it is a sacred social ritual, a cornerstone of hospitality, and one of the most important cultural practices in the country.
The traditional Ethiopian coffee ceremony is performed by the woman of the house for guests and family. The air is filled with burning frankincense while raw green coffee beans are roasted by hand in a flat pan over charcoal right in front of the guests. The freshly roasted beans are carried around the room so everyone can appreciate the aroma before the coffee is ground and brewed in a clay pot called a jebena.

The Three Cups
Awel (the first cup): the strongest brew, served to the eldest guests first. Kale’i (the second cup): fresh water added to the remaining grounds, representing a deepening of connection. Baraka (the third cup): the final, lightest brew — “to be blessed.” Leaving before the third cup is considered highly disrespectful.
The Jebena
The jebena is a traditional Ethiopian clay coffee pot with a round base, long neck, and woven straw lid. Coffee is brewed directly in the jebena over charcoal, then poured through a strainer into small handle-less cups called cini.
Frankincense & Community
Burning frankincense during the Buna ceremony is not decorative — it is spiritual. The incense purifies the space and signals to guests and neighbors that the ceremony has begun. In rural Sidama communities, the aroma of frankincense and roasting coffee is an open invitation.
