In 95% of coffee cherries, two flat-sided seeds develop facing each other. In a peaberry, only one ovule fertilizes — and the tree channels everything into that single, perfectly round bean.

The peaberry is not a variety or a processing choice — it is a natural anatomical mutation that occurs in roughly 5% of all coffee cherries. Because the tree’s full allocation of nutrients, sugars, and acids goes into one seed instead of being divided between two, peaberries are famously dense and intensely flavorful.
