Hojicha's roasted character makes it more forgiving than other green teas—it won't turn bitter even with slightly hotter water or longer steeping. Use water at 195-205°F (just below boiling) to bring out the toasty, caramel notes. Use 1-2 teaspoons per 8 oz cup and steep for only 30-60 seconds—hojicha brews very quickly!
